Oatmeal-Apple Pancakes

I found this great recipe on wholefoodsmarket.com. It's really tasty and my children ate it up in record time. They're nutritious and delicious silver dollar pancakes that are a great way to get your oatmeal. With only five ingredients, most of which are pantry staples, they’re simple to make any day of the week. Note that this recipe only serves 2 so you'll need to double/triple/quadruple it as needed. And feel free to make extra...they freeze and reheat well in the microwave.

Ingredients
  • 1 cup whole oats
  • 1/2 cup applesauce
  • 1 egg
  • 2 tablespoons maple or agave syrup, plus more for drizzling
  • 1 tablespoon butter
Method
  1. Combine oats, applesauce, egg and maple or agave syrup in a blender and purée to make a smooth batter.
  2. Melt 1/2 tablespoon of the butter in a large skillet over medium heat. Working in batches, drop 2 tablespoons of the batter into the skillet to form each of five pancakes, spacing them about 2 inches apart. Cook, flipping once, until golden brown and cooked through, about 2 minutes per side. Repeat with remaining 1/2 tablespoon butter and batter.
  3. Transfer pancakes to plates, drizzle with more maple or agave syrup and serve.
