Granola Bar Recipe

My children and I made a new recipe for low-fat granola bars yesterday and they turned out amazingly well...and it's an easy, no-bake recipe. It's perfect to have on hand for quick snacks and breakfasts!

I revamped the original recipe a bit to make them even healthier (we used honey instead of corn syrup, cut down the sugar and chocolate chips, and added wheat germ and sunflower seeds). I also used half raisins and half dried cranberries, but these can be made to taste...use apricots if that's your favorite, add chopped nuts, or use almond butter instead of peanut butter...the sky is the limit on personalizing these granola bars! Ingredients

  • 3-1/2 cups Rice Krispies
  • 3 cups quick-cooking oat
  • 1/2 cup wheat germ
  • 1/3 cup sunflower seeds
  • 1 cup raisins
  • 3/4 cup brown sugar, packed
  • 1 cup honey
  • 1 cup peanut butter
  • 2 teaspoons vanilla
  • 1/2 cup mini chocolate chip

Directions

  1. Prepare a greased 13 x 9-inch baking dish.
  2. In a large bowl combine Rice Krispies cereal, oats, wheat germ, sunflower seeds, and raisins.
  3. In a saucepan stir together/combine honey and brown sugar; bring to a boil over medium heat, stirring with a wooden spoon; remove from heat and add/stir in the peanut butter and vanilla until well combined.
  4. Pour over the dry ingredients in the bowl; mix to combine; stir in the chocolate chips.
  5. Transfer the mixture into prepared baking dish. Cool and cut into bars.
